{Monday mornin' thought} Homecooked Meals

I made a BIG effort this week to actually cook. A while back I had  come across a good food blog and I went through and bookmarked things that looked like me and ty would both like.. that's hard b/c we are both picky! Click on the links (in the titles) to get the full recipes from Kevin & Amanda's blog. ONE thing i LOVE about their blog it's seriously written out like "Cooking for Dummies". I am soo not a cook so I have no idea what I'm doing. It beats all recipe books out there! It gives you the play by play along with a little picture of what things should be looking like. I need all the help I can get! One thing I did realize is that I need to work on making side dishes!

I will start from top fave - least fave...

Grilled Chicken Pasta in a Tomato Cream Sauce

This was by far mine and ty's fave.. Good chicken + penne noodles & good sauce = a happy me

ok so I cheated a little.. it gave a recipe for a homemade sauce but it looked exactly like the package above & I realllyyyyy love the sauce of the Parma Rosa so i just used that.

Killer Club Sandwich

This was soo good.. it was our lunch for a couple of days & it deff. gave me my sandwich fix that I thought you could only attain at a diner!

Creamy Chicken Enchiladas

I thought these were really good.. ty thought they were kinda bland and likes the other style enchiladas we make.. but if you have ever had Rotel Chicken.. you will like these.. my only complaint was that the top was kinda dry.. ty drenches his in sour cream on top so i'm sure he didn't have that problem

Bacon Cheeseburger Chicken

These were good.. not knock your socks off but a good meal. I'm not total ranch lover, and we have made something really similar but used bbq sauce.. which i think i prefer. 

Crispy Shrimp Pasta

I was highly disappointed in this one.. This is the image i first came across that sparked me wanting to make some new meals that we haven't tried & it didn't quite live up to its expectations. I think it was mainly the sauce I was disappointed in & it was too oily for my liking (which I'm sure you could easily tweek & i might not have read the directions correctly on the oil?) Anyways, if you like fried shrimp I would totally try it b/c they gave good instructions but I would do a different sauce.
